Brine freezing provides rapid and uniform heat transfer, making it ideal for deep freezing applications while maintaining product structure and quality.

Brine freezing is an effective method for deep freezing, offering exceptionally high heat transfer efficiency for rapid cooling while preserving product texture and quality. Compared with conventional methods such as air blast freezing and plate freezing, it significantly reduces energy consumption, providing a cost-effective solution in both initial investment and operational costs.

Products can be frozen through different brine immersion and spraying processes. In batch systems, products are packed in plastic or stainless steel baskets, placed on racks, and immersed in agitated brine to ensure uniform freezing. In continuous systems, products are conveyed into stirred brine for immersion freezing, then drained and transferred to a hardening tunnel for complete freezing. Alternatively, products can pass through multiple nozzles spraying chilled brine, enabling rapid temperature reduction for both tray-packed and individual items, followed by draining and final hardening.
